Tucked away in the heart of North Devon, The Mole Resort presents an enticing proposition for those seeking a countryside escape that blends luxury, activity, and a deep commitment to local sourcing.
The resort, the former Highbullen Hotel estate in Chittlehamholt, has undergone a £25 million transformation since its acquisition by L+R Hotels in 2021.
The result is a modern retreat with the charm and convenience of a mini Centre Parcs-style resort, offering everything from a private hot tub in each lodge to an extensive range of activities, all nestled in the picturesque Devon landscape.
The 58 luxury eco-lodges, with their contemporary design, offer an ideal base for both relaxation and recreation.
Each lodge boasts a private hot tub, expansive decking, and fully equipped kitchens, making it the perfect place to unwind after a day spent enjoying the surrounding countryside.
The hot tub, in particular, was a highlight; immaculately maintained and delightfully warm, it was the perfect place to sip a cool glass of prosecco while enjoying the tranquility of the setting.

The lodges are spacious, comfortable, and inviting, with ample storage for those bringing along bikes or other outdoor gear, and dog wash stations conveniently placed outside each lodge.
This attention to detail is particularly noticeable for pet owners; The Mole Resort is undeniably dog-friendly, with several areas for dogs to run freely, including a dedicated dog park and woodland walks.
Willow, our dog, was even treated to a special hamper filled with a blanket, toy, poo bags, and a portable dog bowl; an especially thoughtful touch that made outings more convenient. It’s easy to picture oneself tucked up in the lodge in winter, the heating on, board games spread across the table, and a dog contentedly curled up at your feet.

A standout feature of The Mole Resort is its commitment to supporting local businesses. Dining here is an experience rooted in Devon’s rich food culture, with menus that reflect the region’s best produce.
From eggs sourced from Appledore Farm to sausages from Goosemoor Foods, every meal is a celebration of local suppliers.
As a vegetarian, I was particularly impressed with the accommodating staff who went out of their way to ensure my dietary preferences were met, offering me substitute sausages to tailor my breakfast to my needs.
It’s clear that The Mole Resort takes its food sourcing seriously, prioritising local suppliers over large-scale imports and ensuring that each dish is as fresh as it is authentic.
The resort’s ethos also extends to sustainability, with an emphasis on recycling.
Each lodge provides easy access to recycling facilities, reflecting a commitment to reducing environmental impact while maintaining high standards of comfort.
In keeping with its community-focused ethos, The Mole Resort goes beyond offering a premium stay; it also contributes significantly to the North Devon economy.
With over 100 staff members, including apprenticeships, the resort is a key employer in the area. It also fosters tourism in the region by promoting local attractions such as Dartington Crystal and RHS Rosemoor, and even offers guests discounted access to these sites, encouraging them to explore and support the local economy.
The resort’s extensive facilities are another draw.
From tennis and pickleball courts to a fully equipped gym, indoor and outdoor swimming pools, and a wellness centre offering spa treatments, The Mole Resort has something for every interest.
For families, there’s a children’s play area and a games room, while adults can enjoy yoga, aqua fitness, and a variety of other classes.
There’s also a trim trail, petanque, and croquet for those looking for a more leisurely pace. Dining options are equally varied.
The restaurant offers a wide selection of dishes, including locally sourced ales, ciders, and spirits, while the option to have meals delivered directly to your lodge makes it ideal for a more private, relaxed experience.
Staff are attentive, ensuring that service is swift without sacrificing the quality of the experience.
Whether enjoying a meal in the restaurant or in the comfort of your lodge, the food is a highlight of the stay.
The Mole Resort is part of a collection of distinctive properties owned by L+R Hotels, including the famous Chewton Glen in Hampshire, as well as the Lygon Arms in the Cotswolds and Cliveden House & Spa.
These properties share a commitment to luxury, exceptional service, and strong community ties.
Guests can expect the same high standard at The Mole Resort, which blends the best of modern luxury with the timeless appeal of the Devon countryside.
Despite its all-inclusive offering, The Mole Resort is just a 30-minute drive from Barnstaple, providing guests with easy access to North Devon’s beaches and hiking trails, as well as the town.
Yet, with so many activities available on-site, it’s unlikely guests will feel the need to leave at all.
The resort even offers hotel rooms for those who prefer more traditional accommodation.
Whether you’re visiting for a weekend getaway or a longer stay, The Mole Resort delivers a welcoming, family-friendly atmosphere that encourages relaxation, outdoor activity, and a connection to the local community.
With its thoughtful approach to food, pet-friendly amenities, and year-round appeal, it’s a resort that promises to deliver something for everyone; whether you’re seeking adventure or simply a quiet place to unwind.
